Dinner is always a chore around here at No. 9257. When you have a picky teen it makes life a bit more difficult. I am always trying to come up with dinners that my son will like...(me and the hubby will eat anything!) Throw in the fact that the hubs has signed up for another 10K and is trying to lose weight...ugh, too many variables for me to consider. Tonight I came up with the brilliant idea to have "fried" chicken on the George Foreman grill. It was surprisingly yummy ... so, I thought I would pass it along :) Here is what you will need: Combine crushed saltine crackers, bread crumbs and flour in a bowl. In a separate bowl, combine eggs and milk. Heat up the grill and spray a generous amount of cooking spray on the grill. Dip each piece of chicken in the egg and milk mixture, then roll it in the breading mixture. I repeated steps 4 and 5 several times to give the chicken a good coating... Turn the chicken strips once so that each side is fully cooked. I served mashed potatoes, beans, salad and bread. Mmmm...delightfully yummy! Enjoy... Inspired, Dawn |
